Drink it now or cellar for up to 8 years. No need to decant, but best to open it half an hour before service. Considered one of the pioneers of contemporary Spanish viticulture, Telmo Rodríguez has been producing a wide range of wines (often limited editions) from various regions of the country since the 1990s, with a particular focus on indigenous grape varieties, even lesser-known ones, and sites with unique terroirs, even in less popular areas. His production aims to revitalize certain wine districts of Spain, producing wines that express a strong connection to their terroir. Gaba do Xil Blanco is a white wine made with Godello grapes and other local varietals sourced from the O Barreiro plot, a recently acquired and renovated 20-hectare vineyard located in the municipality of Larouco. Here, the organically grown vines are rooted in shale clay soils and enjoy the Atlantic climate with continental influences typical of the Valdeorras region. After manual harvesting and spontaneous fermentation, the finished wine rests on the lees for 4 months. In the glass, the wine reveals a brilliant golden color. Its aromatic profile is broad and fragrant, with notes of citrus and green apple, followed by floral and mineral hints. On the palate, it is fresh and lively, balanced and round. It has a pronounced acidity, a light body, and a soft, smooth texture. The finish is long and mineral. Enjoy it with sushi, seafood, or white fish.
